    I made this soup last night and just enjoyed a cup for lunch. So delicious and filling, I loved it, and have to say that it was my first time having butternut squash–EVER!     @leansecrets i can’t always do raw veggies, just gets boring. So I dicovered raw soups! Great tasting and so good for you! another recipe.. in the ninja rough chop 1 zucchini, 1 lg carrot,1 small tomato,1/2 cucumber,a couple garlis cloves, spinach leaves to fill to the top add enough chicken broth to help blend. after it is rough blended I add an avacado blend a little more. I like this a little on the chunky side. bon appetit!

    Trader Joes has pre-peeled and chopped butternut squash which totally streamlines this recipe. I seasoned my squash with pumpkin pie spice, salt, and pepper when I made this, it was incredible. 🙂

    Brenda…wanted to give you a quick tip for Butternut Squash! Just rinse squash and bake it whole in oven on foil lined pan at 350 about 1 hr. (poke easily through with knife) they are ready. Cool and cut in half, scoop out seeds. You can easily scoop out squash or peel away skin. I also bake several at a time and put in freezer bags and freeze for another time or just store in fridge for use later in week. You can do this with any squash. SAVES TIME AND YOUR FINGERS!

    @laurenmarston It’s not necessarily “Low Carb”…but butternut squash is very high fiber, low glycemic index, rich in vitamins etc. I don’t recommend you eat processed carbs like bread or crackers, but I DO recommend including Lean Carbs (like fruits and vegetables). This soup is the perfect example of a Lean Carb.

    I made this tonight an LOVED it!!!!! My boyfriend was apprehensive to even try it and he loved it too. I’ve had the dish in restaurants before but never actually made it. It was so easy to make and so delicious. I had to substitute a red onion for the shallots (I forgot to get them at the store) but it still turned out great. Thank you!!!!!!
